3 Christmas recipes for schools

Get stuck into these mouth-watering Christmas recipes that are sure to add a festive twist to your food technology lessons.

1) Nutella truffles

The nutty chocolate spread is a firm favourite with children and big kids! So, why not use it to make delicious festive truffles?

Makes 15 truffles

How to make them:

  1. Dissolve 30g caster sugar in a saucepan with 2tbsp water to make a caramel. Add 50g whole hazelnuts and mix well, ensuring that the nuts are coated with the caramel. Place the nuts on a sheet of baking parchment and allow to dry.
  2. Break up 50g plain chocolate and melt in a pan with 2tbsp single cream and 150g Nutella. Mix well then remove from the heat and leave to cool.
  3. Using a teaspoon, scoop up a nut-sized piece of the Nutella mixture. Add a caramel-coated nut and roll in your hand to form a small ball. Repeat until you’ve used up all the mixture then coat your truffles with cocoa powder or finely chopped, toasted hazelnuts (around 30g of nuts should coat 15 truffles).

NB: This recipe is not suitable for students with nut allergies.

2) Cheese stars

These savoury snacks always disappear fast at Christmas gatherings, and they couldn’t be any easier to make!

Makes 20 stars

How to make them:

  1. Unroll a 320g sheet of puff pastry and sprinkle a mugful of grated cheese over one half. (Choose your favourite cheddar or combine two cheeses). Fold the other half of the pastry over and seal the edges.
  2. Dust a rolling pin and your work surface with flour and roll your pastry out until it has doubled in size.
  3. Heat the oven to 200°C /gas 6 and line two baking sheets with baking parchment.
  4. Use cookie cutters to cut the pastry into stars and place them onto the baking sheets.
  5. Brush the tops with milk or egg and add a sprinkling of cheese then garnish with poppy or sesame seeds and herbs (if desired).
  6. Bake for 10-12 minutes or until golden and risen. Transfer to a plate and tuck in! They’ll also keep in an airtight container for up to three days.

3) Chocolate orange cookies

These rich, chocolate biscuits are sure to go down well at tea-time!

Makes 25 cookies

How to make them:

  1. Beat 225g softened butter until fluffy and light then gradually beat in 60g icing sugar, the zest of an orange and 1tbsp orange juice.
  2. Beat in 300g self-raising flour and 40g cocoa powder a small amount at a time then add 175g chopped, dark chocolate and 40g chopped candied orange peel, and mix well.
  3. Divide the mix into two halves and mould each half into a log shape on a piece of baking parchment or non-stick wrap. Use the wrap to help you model each piece into a log of approx. 15cm long. Put in the fridge to chill for around 2 hours, until firm.
  4. Heat the oven to 180°C /gas 4 and line two baking sheets with baking parchment. Cut out 0.5cm-thick cookies from the dough and place them onto the baking sheet, allowing room for them to spread as they cook. Add a strip of sugared, candied peel to the tops of the cookies and bake for 10-15 minutes. Leave to cool on the baking sheet then transfer them to a wire rack.
